BROCCOLI & CHEESE MUFFINS
- 1 box Jiffy corn muffin mix
- 1 (10 1/2 oz.) frozen chopped broccoli, thawed
- 1 green pepper, chopped
- 1 med. onion, chopped
- 4 oz. Cheddar cheese, grated
- 3 eggs
- 3/4 stick butter, melted
Mix all ingredients well and spoon into muffin tin that has been sprayed with Baker's Joy. Bake at 350 degrees for about 30 minutes or until done.

As a Pampered Chef Consultant, I am still building my cookware arsenal. I went to bake these muffins forgetting that I had thrown out my old muffin tin when we made a move last December. And, since I can earn Pampered Chef products for free, I haven't acquired the muffin stoneware yet. So, I baked up these babies in a 9x9 pan instead and they came out beautifully. Quite a hit with my hubby and boys.
